In 2007, he settled down in a small village called Gaja &amp; Villedieu, close to Limoux at the foothills of the Pyrenees Mountains. Don\u2019t expect to see a pretentious Ch\u00e2teau, because for us, a Ch\u00e2teau means much more: first, it must have a great vineyard, with meticulous management to get the best grapes, and second, it must be a house with soul and history.<br \/>\nWe have 20 hectares of vineyards planted with Grenache, Merlot, Syrah, Mourv\u00e8dre, Chardonnay and Cabernet.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-1719 alignleft\" style=\"line-height: 1.5em;\" src=\"\/wp-content\/uploads\/Chateau-Arrogant-Frog.jpg\" alt=\"Chateau-Arrogant-Frog-Blanc\" width=\"350\" height=\"438\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Grape varieties :<\/strong> 55 % Merlot , 25 Cabernet Sauvignon, 20 % Syrah<br \/>\nLimoux-Appellation d\u2019Origine Prot\u00e9g\u00e9e<\/p>\n<p><span style=\"font-size: large;\"><strong>The vine<\/strong><\/span><br \/>\n<strong>Soil types :<\/strong> Cabernet: Clay and limestone (24 year-old)<br \/>\n<strong>Merlot :<\/strong> Limestone and gravels (27 year-old)<br \/>\n<strong>Syrah :<\/strong> Clay and limestone with gravels (20 year-old)<br \/>\n<strong>Harvest :<\/strong> partly hand-picked, partly mechanical<br \/>\n<strong>Average yield :<\/strong> 45 hl\/ha<\/p>\n<p><span style=\"font-size: large;\"><strong>The wine<\/strong><\/span><br \/>\n&#8211; Alcohol: 13.8 %<br \/>\n&#8211; Sugar: 1.5 g\/l<br \/>\n&#8211; Total Acidity: 3,10 g\/l (H2SO4)<br \/>\n&#8211; pH : 3.70<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-size: large;\"><strong style=\"line-height: 1.5em;\">Vinification<\/strong><\/span><br \/>\nGrape destemming, separated-vinification for each variety. Fermentation at 25\u00b0C. Skin contact (10 days for cabernet, 12 days for Merlot and Syrah) at monitored temperature. Wines are blended in November, before putting in barrels.<br \/>\n60% of the wine is then aged for 8 months in oak barrels. We use 60% of American oak barrels and 40% of French oak barrels. The other 40 % are stainless steel-aged.<\/p>\n<p><span style=\"font-size: large;\"><strong>Tasting notes<\/strong><\/span><br \/>\n<strong>Colour :<\/strong> Deep purple with ruby tints.<br \/>\n<strong>Nose :<\/strong> Refined and complex, with black fruits, spices and plum flavour, then you have a spicy vanilla and liquorice finish.<br \/>\n<strong>Palate :<\/strong> Good balance with soft but present tannins . Persistent length on cacao notes.<br \/>\n<strong>Food pairing :<\/strong> Serve at 16\u00b0C, with pasta, BBQ, poultry, game, your best red meats, game, terrine, and cheeses.<br \/>\n<strong>Cellaring :<\/strong> In good conditions, you can conserve it more than 5 years.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Arrogant Frog is experiencing the \u201cLuxe Rural\u201d adventure.
